Tucked away in the Catskills, Bovina Fermentory is a guesthouse, restaurant, and brewery all in one. Guests float in from woodland nooks for farm-style breakfasts, warm up by the stove after countryside rambles, then gather in the communal dining room for three-course kitchen suppers – think hot scones, duck bigarade with creamed parsnip, and blueberry cobbler.

At the acclaimed The Henson, old-school oil paintings contrast with paint-splattered tiles at Matilda, the on-site restaurant by NYC duo Jeremiah Stone and Fabián Von Hauske Valtierra. The menu spotlights locally foraged ingredients in inventive dishes such as lightly smoked Hudson Valley trout with clams and green garlic, or beets paired with red endive and a smoky yuzu vinaigrette.

Good Night gives Woodstock a pan-Asian twist, with a menu that happily hops between Korean and Thai  flavours. Chewy tteokbokki rice cakes are blanketed in melted raclette, shrimp tossed with Thai basil and sticky chilli, and ube mochi are served as sweet finale. Add a carefully chosen wine list and a cosy, romantic dining room, and you have all the ingredients for a spirited night out.
