The daily ritual at NÀDAIR is drafting the chalkboard menu behind the duck-egg blue tiled walls. To one side various natural wines are scattered across the shells, to the other various dried flowers dangle. This neighbourhood restaurant in Marchmont is a relatively new endeavor began by chefs Alan Keery & Sarah Baldry. The stand out? That almost everything on the ever-changing 5-course set menu has been foraged from Edinburgh’s immediate surroundings, even the in house cocktail infusions.
