Standing above 800 hectares of wild Menorcan countryside, Son Ermità is a restored 18th-century finca turned 11-room boutique hideaway. Part of Vestige Collection, it pairs whitewashed stone and antique touches  with panoramic views of the surrounding mountains to the sea. Spend the day wandering olive groves and private trails, dip into the pool, or head down to one of the estate’s secluded calas before settling in for seafood and a glass of something cold at Brisa.

If you ask us, a 100-hectare finca located in a former 17th-century palace sounds like a dreamy place to spend your holidays. The Fontenille Menorca, what with its vine-covered gardens, luxurious spa and divine interiors, is certainly one of our favourite spots to stay.
