Fontanile dei Caprai is the sort of place you hear about from someone local and immediately wonder why nobody mentioned it sooner. Hidden among the vineyards outside Capalbio, it serves deeply comforting Maremman cooking – hand-made tortelli, wild boar ragù, acquacotta and slow-cooked meats – in a farmhouse setting that feels entirely untouched by trends. The menu is short, seasonal and reassuringly rooted in the surrounding countryside, with very little standing between the kitchen and the fields beyond.
