While piping-hot baos filled with juicy pork belly, coriander and spring onions might explain the name, it’s the Biang Biang-style hand-pulled noodles that steal the show at Mamma Bao. Try them cold with a spicy-sour sauce, or our favourite: piled with cumin-spiced lamb and red and green peppers.
